Cookie Baking Help?


This morning, I'm making cookies for Relief Society Enrichment meeting tonight. I don't know if they will turn out! They are suppose to be molasses cookies. You are told to pinch the dough and roll little balls. But mine is more like cake batter than dough!!! I guess it could be because the recipe called for one cup of sugar and I used one cup of softened honey instead. I have put the "dough/batter" in the refridgerator for a while to see if it will harden and I get the desired result.

Has anyone ever run into this problem before? Any suggestions? I usually just buy ready-made cookies to bring to events, but I was so happy that I had all the ingredients required for
this recipe and it seemed easy to do! Hope it turns out. Maybe it will end up being molasses cake, rather than cookies!

(Update: I finally put the batter in the freezer and it did turn into useable dough. They are kinda flat cookies, not puffy like most molasses cookes, but I put a little red cinnamon candy in the middle of each one, so at least they look pretty! And I love the taste of molasses!)

I have heard that when you sub honey for sugar you should reduce the amount...I haven't quite got the hang of the ratio yet though...i'm currently playing with about 1/2-2/3c of honey per 1c of sugar. IT seems to work ok. I havent' done it for cookies yet though...just softer things like brownies (that go into a pan rather than in balls, LOL!)
